Blogging Conscious Choice: The World According to Alice Waters

9-18-2007waters.jpgWhen we were in Seattle this weekend, we picked up a copy of Conscious Choice, hoping it would get us through the quick flight home.

It did. And our favorite article was definitely a Q&A with Alice Waters.

We had the good fortune to catch the better part of Waters' lecture at Dwell on Design last week. For all the people who missed her talk, this interview serves as a nice distillation of what the revolutionary foodie thinks about sustainability and how it relates to food.

 
 

We would argue that preparing and eating meals is one of the most important things we do in our homes. Waters makes an incredible argument for eating locally and eating seasonally.

She also believes that we should be willing to pay more for our food.

I definitely think we should pay more for food. Why should we pay cheap prices for something that fuels our body? Shouldn't we be putting the most money into that and into protecting our body (which can be the same thing)? More than that, food prices should include not only the cost to the grower, but the laborers and their well-being. I say support all beings from all walks of life.
