One idea from Martha Stewart: make lavender sachets with leftover squares. It's a simple project, and you can use the sachets to keep linens smelling fresh. They also make a great gift. Click here for how-to instructions.

If you have a lot of assorted leftovers, you can make napkins out of colored fabrics. We love this project from the Purl Bee because it ties together a hodge podge of colors with the same binding trim. If you have less fabric, use the same concept to make coasters instead of napkins. Depending on how big the scraps are, you can squeeze out a couple of coasters ! Just sandwich some thin batting in between two pieces and quilt together-- I believe there are examples on the Martha Stewart site. The mix of colors makes it fun for guests, too- everyone always loves picking out their coaster !
